Gooseberry fruit fool flavoured with elderflower cordial and 0% fat Greek yoghurt. Delicately tart and refreshingly delicious – a perfect recipe to make the most of the all too short gooseberry season.

Ingredients:
- 500g gooseberries, washed
- 75g caster sugar
- 45ml undiluted elderflower cordial i.e. Belvoir or Green Bottle
- 15ml lemon juice
- 500g Total 0% Fat Greek strained yoghurt
Method
- 1. Place the gooseberries in a saucepan with 125ml water, the sugar and elderflower cordial. Bring to a gentle boil then simmer for 7-10 minutes or until completely soft.
- 2. Using a hand held blender or food processor, puree the gooseberries then pass through a sieve into a clean bowl. Stir in the lemon juice and leave to cool.
- 3. Fold three quarters of the cooled fruit into the chilled yoghurt and divide between four glass dishes. Top with the remaining fruit and any juices. Chill until required.
- 4. Garnish with a sprig of fresh mint or an elderflower leaf.
Serving suggestions:
Oranges and strawberries taste delicious with gooseberries so experiment with the flavours, adding orange zest when cooking the gooseberries or decorating with fresh orange segments or sliced strawberries….
Decorate with mint leaves or fresh edible leaves.
Storage:
If you wish to prepare ahead, refrigerate the pureed fruit separately from the yoghurt and mix together just before serving.
