apricot and almond pots

New season Mediterranean apricots with orange juice topped with low fat fromage frais, toasted almonds and honey.

Ingredients:

  • 200g (about 5) fresh ripe apricots, stoned and quartered
  • 90ml freshly squeezed orange juice
  • 2 cardamom pods, seeds removed and crushed
  • 100g virtually fat free fromage frais
  • 20g whole almonds, halved
  • 22g (1 level tbsp) clear honey

Method:

  • 1. Heat grill to high. In a small saucepan gently simmer the apricots in the orange juice with the crushed cardamom seeds for 3-4 minutes or until softened slightly and warmed through.
  • 2. Divide the apricots and juices between 2 ramekins then spoon on the fromage frais.
  • 3. Meanwhile toast the almonds under the grill for 1-2 minutes until a deep golden brown. Sprinkle over the fromage frais and top with a drizzle of honey. Enjoy immediately.

Serving suggestion:

Enjoy this dessert warm or serve it chilled.
Replace the cardamom seeds with 1.25ml tsp mixed spice.
