Chicken caesar salad

A lower fat version of a classic dish. Look out for good quality low fat (<3% fat) Caesar dressing, as the regular version is about 50-60% fat!

Ingredients

  • 65g 1 ciabatta roll
  • 290g 6 chicken mini fillets
  • 280g 2 whole romaine lettuce hearts, shredded
  • 60g 4 tbsp low fat (<3% fat) Caesar dressing
  • 16g 6 anchovy fillets

Method

1. Preheat the oven to 200oC, fan oven 180o C, gas mark 6.

2. Tear the roll into chunks and place on a baking tray. Bake for 15-12 minutes until golden and crispy.

3. Place the mini fillets under a preheated grill for 5-6 minutes each side until golden and cooked throughout.

4. Mix the lettuce and dressing together and place in 2 large serving bowls, top with the anchovies. Scatter over the ciabatta croutons and then top with chicken.
